Spinach Protein "Bread"

I decided to make some spinach protein “bread.” Decided I needed something crunchy and wanted to sneak in some vegetables 🙂

So I tweaked my previous recipe: high protein, low carb mock focaccia.

Here’s what I did:

Preheat oven to about 400 degrees. Spray a pan with non-stick spray. In a bowl, mix:

  • 1 tbsp baking powder
  • into ½ cup 0% FAGE yogurt.
  • Add: 1 tbsp unprocessed bran
  • ½ cup Egg whites
  • 2 tbsp Italian seasoning mix + oregano + parsley + garlic + pepper

Green Smoothie in the Morn!

Starting the day RIGHT with a GREEN SMOOTHIE!

GreenSmoothie

Today’s Green Smoothie:

  • 1 big handful of spinach
  • ½ frozen banana
  • 1 frozen avocado
  • a few frozen goji berries
  • ½ scoop strawberries n cream Isopure whey powder
  • 3 drops banana flavoring
  • ½ cup egg whites
  • 1/3 cup unsweetened almond breeze (almond milk)
  • ÂĽ tsp guar gum (could add or substitute xantham gum)
  • 3 ice cubes

Blend and enjoy. Yum!

Tidbits & Big Changes

I haven’t been posting as much as I want to. Things have been c-r-a-z-y lately. A lot going on! Here are some tidbits:

  • Four dogs in the house. We already have two big pitbulls, but my boo is like a regular Cesar Millan so he is always babysitting his client’s dogs.  We were planning on all going hiking today for our newly weekly hiking ritual, but the rain…rained on our parade. Boo!

Tangy Kale Chips

So, I love kale too much and have seen the raves about kale chips too much in the blogosphere recently to not try these crunchy nuggets of goodness. As always, I looked at a bunch of different recipes and created my own synthesis. This is what I made this morning:

Tangy Kale Chips

Kale:

  • 1 bunch organic green kale
  • 1 bunch organic Red Bor Kale

Seasonings:

  • 2 tbsp crushed Garlic
  • 2 tbsp Apple cider vinegar
  • 1/3 cup Braggs Amino Acids

Crockpot Chicken Curry

Here is what I made today from a mix of groceries I bought for the chicken curry and from stuff that was already in my fridge:

Threw in the crockpot:

  • diced onions
  • chopped squash
  • chopped cauliflower
  • chopped Rai Lan (Asian broccoli-rapini I found)
  • chopped asparagus
  • baby carrots
  • bit of chopped kale
  • garlic, cumin, tumeric, Mrs Dash extra spicy seasoning, ginger, red Thai curry paste, 1/2 can of light coconut milk
  • and topped with 10 boneless skinless chicken breasts

I put it to cook on low setting for 8 hours.

Chocolate Protein Black Bean Spinach Brownies

Here was my latest experiment:

Brownies

  • 1 can black beans  (I chose low sodium)- drained
  • 1 cup spinach
  • 2 cups egg whites
  • 1 cup 0% FAGE yogurt
  • 1 tsp xantham gum
  • 1 tbsp baking powder
  • 2 scoops Nectar chocolate truffle protein powder
