Double-Baked Sweet Potatoes

Double-baked sweet potatoes. Me likies. Here’s how:

Pierce the skin with a fork

Brush the skin with olive oil to keep it moist while baking

Bake at 375 for about 40 minutes

Cut in half, and scoop the contents of the sweet potato into a separate bowl

Mix with desired ingredients (e.g. shredded chicken, steamed broccoli, spinach, or other). This instance, I mixed the sweet potatoes with chopped red swiss chard, and chopped broccoli.

Scoop the mixture back into the skin of the sweet potato, pat back into place, and return to the oven for another few minutes. (You can add some low fat cheese on top!! I would have, but didn’t have any on hand)

Yummy! This makes two or more servings, depending on how much sweet potato you would like to eat in one sitting 😉

Note: the picture, as always, looks terrible, as I am a terrible photographer and actually don’t even have a camera and just use my iphone. This dish is quite tasty!!!

    Mmm I love sweet potatoes!! What does baking them twice do?

      Once you scoop out the insides and mix it with the other ingredients, you put it BACK into the potato skin, so that all the flavors combine and everything gets cooked all the way. If you elect to add cheese, also, this is where it gets yummy and gooey.

      Also, it’s not really baking twice fully. Just putting back into the oven for a few min. It’s just called “double baked.” I didn’t make it up! 😉 My client told me the recipe for regular double baked potatoes, so I decided to try it with sweet potatoes! An internet search showed I wasn’t the first one with the idea! You can get really creative with it! Double baked sweet potatoes a la April. Do I have a psychic vision that there is peanut butter involved?
