Bomb Diggitty Curry Muffins

Excuse me, I’m sorry, I just busted out on the impromptu some bomb diggitty curry muffins. You know the recipes where you just use up the ingredients you have?…yeah, that’s what occcurred.

Simmer in a pot: organic kale, organic free range chicken broth, organic grape tomatoes, organic celery, organic carrots, and a tiny bit of leftover organic beef I had made. Simmer, simmer, simmer, til the celery and carrots are soft. Then I added 5 eggs and some liquid eqq whites, pepper, garlic salt with parsley, onion powder, and Madras curry powder. Then I pulsed that ish in tha blender. Out came a curry savory splendor ready to be baked.

So I put a lil olive oil on the muffin pan so the muffins wouldn’t stick, and poured a bit of the mixture in each muffin hole (that’s a good word, muffin hole). I baked it at 400 degrees for like 30 min and out sprung some healthy divinity. Full of veggies, antioxidants, protein- and something a little different to combat the boredom 😉
