Cinnamon Cabbage

This recipe is a winner! yummz

Cinnamon Cabbage

Ingredients:

  • Tropical Traditions coconut oil
  • one organic cabbage
  • one organic apple
  • one organic orange
  • an ABSURD amount of cinnamon
  • an insane amount of stevia

All I did was chop the cabbage, apple, and orange. Sautee it all in the coconut oil, with cinnamon and stevia for like 5-10 min. Bon appetit!

Low Cal/Low Carb/Low Fat Chicken Salad

Ingredients:

  • about 7 oz organic skinless boneless chicken breast
  • a few stalks of celery
  • about 3 tbsp Walden Farms mayo
  • some parsley, pepper, dill, and chives
  • a dab of dijon mustard
  • a splash of lemon juice
  • about 1-2 tbsp FAGE 0% yogurt
  • 1 scoop chia seeds

I diced up the chicken and celery and mixed it with the other ingredients. Yummers! I can’t believe that the Walden Farms mayo turned out to be good for something! I ate this on top of some cabbage leaves. Very crunchy yet creamy. ...

Roasted Veggies

I popped radish and rutabaga into the oven on a tray with some olive oil and sprinkled with some of the “chickpea seasoning” I got at Whole Foods and sprinkled on the roasted chickpeas (see the other post). I put in in the oven at around 325, and get comfortable, people, cuz you ain’t goin nowhere for over an hour. They’re good, though! Great to throw in with your chicken and veggies to get a low glycemic carb.

Spinach Cauliflower Mashed Potatoes

I steamed a head of organic cauliflower, blended it with a handful of organic spinach, a dollap of Fage 0% yogurt, and a little water.

The result- mashed potatoes!!! That are green!! Okay, ***I*** am excited. Maybe my boyfriend will think it looks like toxic waste, but it is far from it, my friends. Me likies!
