Chocolate Protein Black Bean Spinach Brownies

Here was my latest experiment:

Brownies

  • 1 can black beans  (I chose low sodium)- drained
  • 1 cup spinach
  • 2 cups egg whites
  • 1 cup 0% FAGE yogurt
  • 1 tsp xantham gum
  • 1 tbsp baking powder
  • 2 scoops Nectar chocolate truffle protein powder

Preheat oven to 350 degrees.  Mix together all the ingredients except beans and spinach. Blend black beans and spinach in a blender, then mix back into the protein mixture. Spray oven-safe pan with Pam, and pour the batter into the pan. Bake about 30 minutes. And you have healthy brownies! Good for post-workout when you need some protein and carbs. Makes 8 servings.

Nutritional Info per serving:

C: 10g

P: 17g

F: 1/2g

Calories: 112.5

I ate mine warm with a tad bit of coconut butter and walden farms caramel.

    I love this! I’ve been printing out all of your recipes and have been meaning to make them!

    I’ve got a question- i know you said that you eat over 2000 cals and have a decent amount of muscle..do you think I need to eat more than I do now to gain some?

    Ahhh thanks April!

    As far as your calories- it’s hard to say when I don’t know your program. Do you have a trainer? If so, you should follow his advice. Haven’t you been consistently gaining muscle over the past however many months? If so, do what you’ve been doing! It sounds like you’ve been making consistent progress in losing fat and gaining muscle, which is amazing!! I don’t know your RMR, and other factors that may come into play but I definitely would not be scared to go over 2000 cal for you, considering you’ve been creeping closer and still seeing improvements in your physique. You should definitely increase your calories if you’re feeling ravenous all day every day, which i don’t think you do anymore…Let me know if you have any other specific questions chica. I think you are doing the right thing!

    Thanks! I don’t have a trainer.. I’m a poor college student! Haha! I”m lifting heavy 5 days a week, doing HIIT 2 times, steady state once for 20 minutes, and an hour long cardio kickboxing class once a week. I’ve been eating between 1800-2000, but I’m wondering if I need to increase it again.

    These sound great. Quick question: what size of a can of black beans do you use? 19 fl. oz (540ml)? Or something smaller? Thanks.

    Susan- I used a 15 oz can, but all my recipes are approximate. I have seen other black bean brownie recipes that call for 2 cans of black beans, so feel free to experiment a little ;) Let me know!

    I’ve been playing with black bean brownie recipes for a little while now. I find that there is a slight black bean aftertaste. Still working on combating that. I definitely want to try this one out. thanks for sharing
