Double-Baked Sweet Potatoes

Double-baked sweet potatoes. Me likies. Here’s how:

Pierce the skin with a fork

Brush the skin with olive oil to keep it moist while baking

Bake at 375 for about 40 minutes

Cut in half, and scoop the contents of the sweet potato into a separate bowl

Mix with desired ingredients (e.g. shredded chicken, steamed broccoli, spinach, or other). This instance, I mixed the sweet potatoes with chopped red swiss chard, and chopped broccoli.

PB & Graham Cracker Protein Treat

I decided to do a little experimentation, since I was in the kitchen. I mixed:

Dash cinnamon

4 tbsp all–natural crunchy almond butter

1/3 cup unprocessed bran

1 tbsp canned pumpkin

1 tsp light yacon syrup

½ cup unsweetened vanilla almond breeze (almond milk)

30 g chia seeds

4 scoops VPX graham cracker protein powder

1 scoop Nectar chocolate truffle protein powder

1 scoop All the Whey cake batter protein powder

It made this really sticky GOO.

1/3 cup 1% fat cottage cheese (no salt added)

1 scoop VPX zero carb graham cracker protein powder (you can buy this here)

Cauliflower “Mashed Potatoes”

Steam 1 head cauliflower

Put steamed cauliflower in blender or food processor, and blend with:

1/3 cup FAGE 0% yogurt

1/3 cup egg whites

about 1 cup water.

I added dried chives, garlic powder, and black pepper.

Exotic Chicken Breast to Heal

My shoulder has been hurting…a bit inflammed. I saw the chiropractor at work, and she says it may be bicep tendonitis…grr..(I know something has been wrong, but didn’t know what…)…so I may rest it some more 🙁 I hate rest! Anyway, I decided it was time to make some “anti-inflammatory” chicken. I seasoned the chicken breast with herbs that decrease inflammation, such as:

Cayenne
Tumeric
Ginger
Cumin

Coconut Cake Batter Protein Mash

I had a great workout at the gym this morning. Perhaps it was a little artificially inspired by (cough cough) caffeine but it FELT GREAT!
